Back!

Hey guys, I'm not feeling much better but feel like it's time to go back to posting.
I had a kidney ultrasound on Monday - that was clear but they found protein in a urine test (gross, sorry) and the doctor I saw yesterday thinks it might be nephritis. My regular doctor's office is setting up an appointment for me with a kidney specialist. I'm hoping everything will be OK. We'll see.
I'm without my computer right now (cat chewed through the power cord) so I haven't been as up-to-date on my health blogs as I'd like. We've ordered a new cord though, and it should come in a couple of days.
So how was everyone's Easter? I was concerned about Easter this year because of the abundance of chocolate, marshmallow Peeps, and jelly beans that are synonymous with Easter. Obviously on a low-carb diet, no candy is allowed (although I did have an Atkins bar). I almost got away without any, but ended up eating a few pieces of Matt's when he wasn't looking! Now it is safely hidden away where I can't reach it
Why does it seem like every holiday in America is an excuse to eat candy? Valentine's day and Halloween are especially notorious. Every holiday I try to prepare myself for all the candy that's going to be around, and either don't buy it, or buy some and tell myself it's just for Matt and I won't eat it (of course I end up eating it!). Do Americans really need any more candy with all the excesses of food we have already?
Well, I've moved on from Easter and have resumed low-carbing. Tonight's dinner will be a steak and a salad. I also may make some flax muffins from a great recipe I got - I'll post that soon. They're delicious!
Stay tuned...
